Instructions
- Season the rice Toss warm rice with salt 1 tsp, sesame oil 1.5 Tbsp, and sesame seeds 1 Tbsp. Fold gently (don’t mash) and cool slightly on a rack.
- Prep fillings Make thin egg sheets with a pinch of salt; slice into long strips. Sauté carrot with a pinch of salt until moisture cooks off. Blanch spinach, squeeze dry, season with soy sauce 1 tsp + sesame oil 1 tsp. Scoop out cucumber seeds; salt 5 min, squeeze dry, then lightly sauté or use raw. Trim danmuji/burdock/crab sticks to length.
- Set up to roll On the rough side up of nori, spread 130–150 g rice in a thin, even layer; leave a 1.5 cm gap at the top edge.
- Arrange fillings Line up spinach → cucumber → carrot → egg → danmuji → burdock → crab/ham. Keep the pile low and even so it won’t burst.
- Roll tight Use the mat to fold, press firmly once to lock the core, then continue rolling to the end. Rest seam-side down for 1 minute to set.
- Finish & slice Brush a little sesame oil on the surface; sprinkle sesame seeds. Wipe a non-serrated sharp knife with a drop of oil and slice into 1.5 cm pieces.
